Nutter Butter Cake – Low Carb & Gluten-Free


I'm dancing in my seat!  This cake turned out so deliciously, that I crammed down three pieces right out of the oven!  

Dry Ingredients:

1/2 c coconut flour

1/2 c almond flour, finely ground

1/4 c tapioca flour

1/2 c PB2 Powered Peanut Butter

1/4 tsp baking soda


Wet Ingredients:

5 eggs

1/2 c 100% pure maple syrup

5 drops stevia

1 c whole milk (or full-fat, in a can, coconut milk)

1/2 c chunky peanut butter (creamy is ok too)


Mix all wet ingredients in mixing bowl.  Mix all dry ingredients in separate mixing bowl.  Pour all dry ingredients into wet mixture and stir until mixed thoroughly.  Place batter into greased 8×8 pan.  Bake @ 350 degrees for 35-45 minutes depending on your oven.  Let cool, if you can stand it!

Serve with homemade, stevia sweetened, whipped cream!  Mmm…
