Simply Wonderous Waffles

wafflesHave no fear!  The waffles are here!

You CAN have waffles and still follow Trim Healthy Mama.  Barring that I don't have the THM Baking Blend at this time and only have a few different items that are part of it (almond flour, coconut flour, golden flax meal) I searched online for recipes that used almond flour as the basis for the recipe.  I found one at Power Hungry that I took and modified.  Their's calls for arrowroot powder (a thickener) and nondairy milk.  I used golden flax meal instead of arrowroot powder, heavy cream and water.  I used our waffle maker, sprayed so they wouldn't stick and cooked until medium dark.  They turned out wonderful!  Thick, fluffy with a slight crunch on the outside.  If I were going to use them for sweet, stand alone waffles though, I'd add more sweetener.  I didn't use alot, since I knew I was going to use them as breakfast sandwich triangles.  I hope you enjoy the recipe as much as I did!

Simply Wonderous Waffles

  • 1 to 1 1/2 c. almond flour
  • 1 T. golden flax meal
  • 1/2 tsp. aluminum-free baking powder
  • 1 pinch mineral salt
  • 2 large eggs
  • 1/2 c. heavy cream
  • 1/4 c. (or more) water to thin batter
  • 1/2 squirt liquid vanilla creme stevia

Place waffle maker on medium high or the mid-mark from medium to dark and voila!  Super yumminess and no guilt!

These fall into the "S" meal category.
